Sunaree Fermented Fish Sauce (น้ำปลาร้าตราสุนารี, nam pla ra tra Sunaree) is a Thai fermented fish sauce (nam pla ra / น้ำปลาร้า) produced under the Sunaree brand. Nam pla ra is a fundamentally different product from regular fish sauce (nam pla) and should not be confused with it. While regular fish sauce is made from saltwater fish (typically anchovies) and produces a clear, relatively mild fermented liquid, nam pla ra is made from freshwater fish — typically small river fish such as pla ra (fermented fish) — fermented with salt and roasted rice for an extended period, producing a much more pungent, complex, and intensely flavoured liquid with a thick, murky appearance and a deeply savoury, funky, and umami-rich character. Nam pla ra is a cornerstone ingredient of Isan (northeastern Thai) and Lao cooking, used as a seasoning and flavour base in dishes such as som tam (papaya salad), laab, gaeng nor mai (bamboo shoot curry), and jaew bong (Isan chilli relish).
