Nongshim Shin Ramyun (신라면, shin ramyun) is South Korea’s best-selling instant noodle and one of the most widely recognised instant noodle brands globally. First launched in 1986, it is built on a spicy beef and mushroom broth seasoned with gochugaru (Korean red chilli) and anchovy, producing a deep red, intensely savoury, and moderately spicy soup with a clean, lingering heat. The noodle is a firm, springy wheat noodle that holds its texture well in the broth without becoming soft. Shin Ramyun sits at a higher heat level than Neoguri Spicy and is the benchmark spicy Korean instant noodle against which most others in the category are compared.
