Mom’s Select Nor Mai Som Sab (หน่อไม้ส้มสับ, pronounced nòr mái sôm sàp) is the strip-cut (chopped) format of Mom’s Select fermented sour bamboo shoots — the same Nor Mai Som (หน่อไม้ส้ม) lactic acid-fermented product as the Sliced variant, but cut into shorter, irregular strips rather than flat wide sheets. The Sab (สับ, chopped/strip) format breaks down more readily during cooking, integrating into soups and curries with a finer, more distributed texture compared to the broader Sliced (Baen, แผ่น) pieces. Both formats share the same tangy, sour fermented flavour characteristic of Nor Mai Som and are used in the same Isan dishes — the choice between them is primarily one of texture preference and cooking style. The Strip format is particularly well-suited to dishes where the bamboo shoot should blend into the broth rather than remain as a distinct piece.
