Mom’s Select Nor Mai Som Baen (หน่อไม้ส้มแผ่น, pronounced nòr mái sôm bàen) is a fermented sour bamboo shoot product in sliced (flat sheet) format — a staple ingredient in northeastern Thai (Isan) cuisine. Nor Mai Som (หน่อไม้ส้ม) refers to bamboo shoots that have undergone a natural lactic acid fermentation process, developing a distinctly sour, tangy flavour that sets them apart from plain or unsoured bamboo shoots. The sliced (Baen, แผ่น) cut produces flat, wide pieces suited to soups and curries where a broader surface area is preferred, as distinct from shredded or whole shoot formats.
