How to Grow

Sow seeds directly into well-drained, fertile soil in a sunny to partly shaded position. Plant 0.5–1cm deep, spacing 15–20cm apart. Water regularly to keep soil consistently moist. Choy sum grows best in cooler conditions — ideal for Australian autumn, winter, and spring gardens (March–October). In tropical regions, grow during the cooler dry season. Harvest stems when 20–30cm tall and just as the first yellow flowers begin to open — this is the peak of flavour and tenderness. Cut just above the lowest leaves to encourage vigorous regrowth.

Choy sum is a Thai and Chinese kitchen staple — blanch whole stems and serve with oyster sauce and sesame oil for a classic, elegant side dish. Stir-fry with garlic and oyster sauce for a quick, nutritious accompaniment to any meal. Add to Thai clear soup (gaeng jued), congee, or noodle soups for extra greens and sweetness.
