Grow Your Own Thai Winter Gourd — Large, Smooth & Long-Keeping

A staple of Thai home gardens and kitchens, Minara Winter Gourd Seeds (No. 4102) produce large, smooth, glossy gourds with mild, delicate flesh that’s perfect for soups, stews, and light Thai dishes. Known for their excellent storage life, winter gourds are a practical and rewarding crop for Australian home gardeners.

Why You'll Love Growing These

  • 🌱 Large, impressive fruit — produces big, smooth, glossy gourds with a beautiful appearance
  • 🍯 Mild, delicate flesh — light, clean flavour that absorbs broths and seasonings beautifully
  • 📦 Excellent storage life — keeps well after harvest, reducing waste and extending your harvest season
  • 🌿 Vigorous grower — fast-growing vines that thrive in warm Australian conditions
  • 🇹🇭 Authentic Thai variety — the winter gourd (fak khiao) used in Thai clear soups and stir-fries

How to Grow

Sow seeds directly into well-drained, fertile soil in a sunny position. Plant 2–3cm deep, spacing plants 100–150cm apart to allow for vigorous vine growth. Provide a strong trellis or fence for support. Winter gourds thrive in warm, sunny Australian conditions from spring through summer. Harvest when the skin is firm and smooth, before the gourd becomes too mature.

In the Kitchen

Winter gourd (fak khiao / ฟักเขียว) is a classic Thai ingredient — use in gaeng jued (Thai clear soup) with minced pork and glass noodles for a light, comforting dish. Stir-fry with oyster sauce and garlic for a simple side. Add to Chinese-style braised dishes or steam with seasoning for a healthy, low-calorie meal.
