Grow Your Own Thai Water Spinach — Crisp, Fresh & Fast Growing
A true Thai kitchen staple, Minara Water Spinach Seeds (No. 1109) produce the vibrant, crisp-stemmed morning glory greens (pak bung / ผักบุ้ง) beloved across Thai, Chinese, and Southeast Asian cooking. Tender, mildly flavoured, and incredibly fast-growing, water spinach can be grown in soil or water — making it one of the most versatile and productive greens for Australian home gardens.
Why You'll Love Growing These
- ⚡ Extremely fast-growing — ready to harvest in as little as 25–35 days from sowing
- 🌿 Crisp stems & tender leaves — fresh, mild flavour with a satisfying crunch
- 💧 Grow in soil or water — thrives in garden beds, pots, or even shallow water containers
- ✂️ Cut-and-come-again — harvest regularly and the plant keeps producing vigorously
- 🇹🇭 Authentic Thai variety — pak bung, the essential green for pad pak bung fai daeng (Thai stir-fried morning glory)
How to Grow
Sow seeds directly into moist, fertile soil in a warm, sunny position. Plant 1–2cm deep, spacing 15–20cm apart. Water generously and consistently — water spinach loves moisture and grows best in warm, humid conditions. Ideal for tropical and subtropical Australian gardens (QLD, NT, Northern NSW) from spring through summer. In cooler regions, grow in a warm, sheltered spot or greenhouse. Harvest young shoots and leaves when 20–30cm tall, cutting just above a leaf node to encourage vigorous regrowth.
In the Kitchen
Water spinach (pak bung) is the star of one of Thailand’s most iconic street food dishes — pad pak bung fai daeng (stir-fried morning glory with garlic, chilli, oyster sauce, and fermented bean curd), cooked over a blazing wok for a smoky, intensely flavourful result. Also delicious blanched and served with nam prik (Thai chilli dipping sauce), added to soups and curries, or stir-fried simply with garlic and fish sauce for a quick, nutritious side.
