How to Grow

Sow seeds directly into well-drained, fertile soil in a sunny to partly shaded position. Plant 0.5–1cm deep, spacing 20–25cm apart for full-sized plants. Water regularly to keep soil consistently moist. Tall pai tsai grows best in cooler conditions — ideal for Australian autumn, winter, and spring gardens (March–October). In tropical regions, grow during the cooler dry season. Harvest whole plants when mature, or pick outer leaves regularly for a cut-and-come-again approach.

Tall pai tsai is a Thai and Chinese kitchen workhorse — stir-fry with garlic and oyster sauce for a classic, simple side dish. Blanch and serve with oyster sauce and sesame oil for a clean, healthy accompaniment. Add to Thai clear soup (gaeng jued), congee, or noodle soups for extra greens and body.
