How to Grow

Sow seeds directly into well-drained, fertile soil in a sunny position. Plant 2–3cm deep, spacing 10–15cm apart in rows 40–60cm apart. Provide a trellis, netting, or stakes for the climbing vines. Snow peas prefer cooler growing conditions — best sown in autumn and winter across most of Australia (March–July) for a spring harvest. In cooler southern regions, sow in early spring as well. Water regularly and harvest pods frequently — picking often encourages the plant to keep producing. Harvest when pods are flat and before the peas inside begin to swell.

Snow peas are a Thai and Asian kitchen staple — stir-fry with garlic, oyster sauce, and chilli for a classic Thai-style side dish. Toss raw into salads or grain bowls for a fresh, crunchy addition. Add to pad thai, fried rice, or noodle soups in the last minute of cooking to retain their crunch and colour. Blanch briefly and serve with a sesame dipping sauce as a healthy snack. Also wonderful in Chinese-style beef and snow pea stir-fry or Japanese-style salads.
