How to Grow

Sow seeds directly into well-drained, fertile soil or a pot with good drainage in a sunny to partly shaded position. Lightly crush seeds before sowing to improve germination. Plant 0.5–1cm deep, spacing 10–15cm apart. Water gently and keep consistently moist. Coriander prefers cooler growing conditions and bolts quickly in heat — best sown in Australian autumn, winter, and spring (March–October). Sow small batches every 3–4 weeks for a continuous supply. Harvest outer leaves and stems as needed, or pull whole plants when mature.

In the Kitchen

Coriander (pak chee) is the essential finishing herb of Thai cooking — use fresh leaves and stems to garnish tom yum, tom kha, and Thai clear soups for an authentic aromatic finish. Scatter over pad thai, green papaya salad (som tum), and Thai curries. Use coriander roots (unique to Thai cooking) pounded with garlic and white pepper as the flavour base for marinades, soups, and stir-fries. Add fresh to Vietnamese pho, banh mi, and rice paper rolls. Also wonderful in Mexican salsas, Indian chutneys, and Middle Eastern dishes for a globally versatile herb.
