These are sen yai (เส้นใหญ่) style flat noodles — wide, flat rice noodles with a satisfying, substantial, and chewy texture. Yen ta fo (เย็นตาโฟ) is one of the most visually distinctive and uniquely Thai noodle dishes — a sweet, sour, and mildly spicy pink-red broth made with fermented red tofu (tao hu yi), which gives the soup its characteristic vivid pink-red colour and subtly tangy, sweet, and savoury flavour.
