Mae Rien Fermented Fish Sauce White (น้ำปลาร้าปรุงรส แม่เหรียญ สีขาว, nam pla ra prung rot mae rian sii khao) is a seasoned fermented gouramy fish extract (pla ra, ปลาร้า) from the Mae Rien brand — White formula. Pla ra is one of the most fundamental and distinctive ingredients in E-San (Isan) and northern Thai cuisine: a fermented freshwater fish condiment made from gouramy fish preserved in salt and rice bran, then fermented for an extended period to produce a deeply pungent, intensely savoury, and complex condiment with a much stronger and more assertive flavour than regular fish sauce (nam pla).
