MAEAMPORN Red Cotton Tree Flowers (ดอกงิ้วแห้ง แม่อำพร, dok ngio haeng mae am-phon) are dried red silk cotton tree flowers (dok ngio, ดอกงิ้ว) from MAEAMPORN — one of the most distinctive and uniquely northern Thai ingredients available. Dok ngio are the dried flowers of the red silk cotton tree (Bombax ceiba), a large flowering tree native to tropical Asia whose vivid red flowers are harvested and dried for use in northern Thai cooking. The dried flowers have a subtle, slightly earthy, and mildly tangy flavour with a soft, slightly gelatinous texture when rehydrated — quite unlike any other ingredient in Thai cooking.
