MAEAMPORN Nam Ngeaw Curry Paste (พริกแกงน้ำเงี้ยว แม่อำพร, phrik kaeng nam ngiao mae am-phon) is a northern Thai nam ngiao curry paste from MAEAMPORN. Nam ngiao (น้ำเงี้ยว) is one of the most distinctive and celebrated noodle soups of northern Thai cuisine — a rich, spicy, and deeply aromatic broth-based noodle soup made with a fermented soybean and chilli paste base (nam ngaeo, น้ำแงว), pork ribs or pork blood, tomatoes, and dried chilli, producing a soup with a complex, fermented soybean depth and a bold, spicy character that is quite different from central Thai soups.
