Mae Sri Fermented Fish Chilli Paste (น้ำพริกปลาร้า แม่ศรี, nam phrik pla ra mae si) is a ready-to-use Thai fermented fish chilli paste (nam phrik pla ra, น้ำพริกปลาร้า) from Mae Sri. Pla ra (ปลาร้า) is fermented freshwater fish — one of the most fundamental and distinctive ingredients in E-San (Isan) and northern Thai cuisine, made from gouramy fish preserved in salt and rice bran and fermented for an extended period to produce a deeply pungent, intensely savoury, and complex condiment. Nam phrik pla ra takes this fermented fish and incorporates it into a chilli paste format — combining the pla ra’s characteristic fermented depth with dried chillies, garlic, shallots, and other aromatics to produce a paste that is bold, spicy, and intensely savoury with the unmistakable funky complexity of fermented fish. This is distinct from the liquid pla ra extract products (nam pla ra prung rot) — where those are liquid seasonings used in cooking, nam phrik pla ra is a thick paste served as a table condiment alongside rice.
