Mae Rusmee Roasted Fish Chilli Paste (น้ำพริกปลาย่าง แม่รัศมี, nam phrik pla yang mae rat-sa-mii) is a ready-to-use traditional Thai roasted fish chilli paste (nam phrik pla yang, น้ำพริกปลาย่าง) from Mae Rusmee. Nam phrik pla yang is a traditional Thai chilli paste made from slow-roasted fish — a preparation method that produces a deeply smoky, rich, and intensely savoury flavour that is distinct from pastes made with dried or fermented fish. The roasting process caramelises the fish and concentrates its natural oils, producing a paste with a complex, smoky depth and a rounded, full-bodied flavour that is considered one of the most comforting and nostalgic of all Thai nam phrik varieties. It is a traditional recipe with deep roots in Thai home cooking, particularly in central Thai cuisine, where it is served as part of a classic rice meal alongside fresh and blanched vegetables. Unlike nam phrik phao (roasted chilli paste), which is roasted chilli-forward and used primarily as a cooking ingredient, nam phrik pla yang is roasted fish-forward and served primarily as a table condiment alongside rice.
