Mae E Pim Thai Fermented Sauce (น้ำปลาร้าปรุงรส แม่อีพิมพ์, nam pla ra prung rot mae ii phim) is a seasoned fermented gouramy fish extract (pla ra, ปลาร้า) from the Mae E Pim brand — one of the most well-known pla ra brands in Thailand. Pla ra is one of the most fundamental and distinctive ingredients in E-San (Isan) and northern Thai cuisine: a fermented freshwater fish condiment made from gouramy fish preserved in salt and rice bran, then fermented for an extended period to produce a deeply pungent, intensely savoury, and complex condiment. It has a much stronger and more assertive flavour than regular fish sauce (nam pla) — where nam pla is a clear, relatively mild liquid seasoning, pla ra is thick, murky, and intensely fermented, and is central to the authentic flavour of E-San dishes.
