LUCKY GOLD Pickled Gouramy Fish Extract (น้ำปลาร้าปรุงรส ลัคกี้โกลด์, nam pla ra prung rot lak-kii goot) is a seasoned fermented gouramy fish extract (pla ra, ปลาร้า) from the LUCKY GOLD brand. Pla ra is one of the most fundamental and distinctive ingredients in E-San (Isan) and northern Thai cuisine — a fermented freshwater fish condiment made from gouramy fish (pla salid or similar freshwater species) preserved in salt and rice bran, then fermented for an extended period. The result is a deeply pungent, intensely savoury, and complex condiment with a much stronger and more assertive flavour than regular fish sauce (nam pla). Where nam pla is a clear, relatively mild liquid seasoning, pla ra is thick, murky, and intensely fermented — an acquired taste that is central to the authentic flavour of E-San dishes including som tam pla ra (ส้มตำปลาร้า, green papaya salad with pla ra), larb, and various E-San dipping sauces.
