LOBO Tom Ka Paste (พริกแกงต้มข่า โลโบ้) is a ready-to-use cooking paste from LOBO for making tom kha (ต้มข่า) — Thai coconut galangal soup, one of the most internationally recognised and beloved Thai soups. Tom kha is a rich, creamy, and fragrant coconut milk soup defined by the distinctive warm, peppery aroma of galangal (kha, ข่า) — a rhizome related to ginger but with a sharper, more citrusy and medicinal character. The soup is typically made with chicken (tom kha gai, ต้มข่าไก่) and seasoned with lemongrass, kaffir lime leaves, galangal, chilli, fish sauce, and lime juice, producing a soup that is simultaneously rich, sour, aromatic, and mildly spicy.
