Sai ua is fundamentally different from E-San sai krok ii-saan: where sai krok ii-saan is a fermented sausage with a sour, tangy character, sai ua is a fresh (non-fermented) sausage packed with aromatic northern Thai herbs and spices — lemongrass, galangal, kaffir lime leaves, shallots, dried chilli, and shrimp paste — that give it a bold, spicy, and intensely herbal flavour profile.
