Healthy Thai Red Curry Paste (เครื่องแกงเผ็ดสูตรเจ, khrêəang gæng phèt sùut jee) is a vegetarian Thai red curry paste formulated without fish sauce or shrimp paste. Red curry paste (gaeng phet) is hotter and more intensely spiced than green curry, built on a base of dried red chillies with lemongrass, galangal, kaffir lime peel, and Thai herbs. This plant-based version delivers the same bold, aromatic heat profile using vegetarian seasonings, making it suitable for vegetarian and vegan cooks.
